Chicken πŸ” tikka Biryani

To all those biryani lovers there!!!!!!!!!… This is something you all going to love. This dish is a little time consuming but at the end the result is worth for it.

When it comes to making a yummy and tastiest biryani. Or just the biryani a simple biryani too is definitely not my cup of tea 🍡. I take my off for cooking πŸ§‘β€πŸ³ sunday and it’s my husband who do all the lunch work and present the hot bowl of biryani before the clock strikes 2 β€˜o clock πŸ•° and make sure I don’t starve 😻.

When it comes to cooking that too biryani he cook with passion and make sure it doesn’t go bad. And also there are things that make our biryani special from others.

Important things for biryani to come out something special. πŸ₯˜

  • ADD THE BIRYANI SPICES WHEN THE GHEEE BECOMES HOT.
  • FRY THE ONIONS TO GOLDEN BROWN.
    • It shouldn’t be too soggy nor burnt. Making the onions to golden brown as well crisp is something more important. So, to solve this you can add onions πŸ§… in small batches to the pan with more oil and fry them little by little.
  • BIRYANI MASALA :
    • I make my own biryani masala instead of store bought one. You can make and store them in a air tight container. Biryani masala you can click on to it for a aromatic powder to make your dish extra special.

Ingredients: Marination
  • Chili powder – 3 tbsp
  • Coriander powder – 2 tbsp
  • Turmeric powder – 1 tsp
  • Pepper – 2 tbsp
  • Salt πŸ§‚ – 2 tbsp
  • Curd – 3 tbsp
  • Ginger garlic paste – 2 tbsp
  • Tikka masala – 1 tbsp
  • Lemon πŸ‹ – 1 tsp
  • olive oil – 1 tbsp
Whole spices for tempering
  • Bay leaf – 3
  • Cinnamon stick. – 2
  • Star anise. – 1
  • Green cardamom – 3
  • Cloves. – 4
  • Mace. – 1
  • Stone flower – 4
  • Fennel seeds – 1/2 tsp
  • Moggu. – 2
Main ingredients:
  • Onion. – 2 medium
  • tomato – 1
  • Green chili. – 3
  • Chicken πŸ— – 1 kg
  • Ginger garlic paste – 3 tbsp
  • Basmati rice. – 4 1/2 cup
  • Mint leaves – 1 handful
  • Coriander leaves. – 1 handful
  • Salt – 2 tbsp
  • Dates. – 3
Preparation : Marination

In a large bowl add in all the masala and add the chicken mix them well until all the chicken πŸ“ get coated completely. Marinate them for 2 hours.

Rice part :

Step 1 :

Take a bowl add 4 cups of basmati rice 🍚 and rinse them until the water is clear. Now soak them for 1/ 2 an hour .

Step 2 :

Now in a large pan add in more water add salt ,bay leaf,cloves ghee and once boiled add in the soaked rice to it. Cook them 70% and filter them and keep aside.

Onion fry :

Step 1 :

Slice the onion πŸ§… thinly and keep them aside deep fry in oil for few mins until golden brown.

Briyani part :

Step 1 :

In a pressure cooker , add ghee once hot add in the whole spices when splutter add onion and green chili after the onion gets cooked add ginger garlic paste and mix them

Step 2 :

Add the chicken pieces and fry them in onion cover cook them for few mins until the chicken releases some water

Step 3 :

Then add the chopped tomatoes πŸ… and mint and coriander leaves and mix them . Now add the masala powders Add 1 tbsp of Briyani masala and then add in 3 tbsp curd and mix them well after few mins it’s time for layering for the dum.

Layering for dum Briyani:

Step 1:

In the pressure cooker take out the excess gravy and keep aside in a bowl, now add half of the cooked rice to the cooker in a layer then add in the gravy as a layer.

Step 2 :

Now add up all the rice as a layer finally place the tikka fry and sprinkle mint and coriander leaves add ghee and sprinkle the onions fry upon them.

Making dum Briyani :

Step 1 :

Cover the pressure cooker with aluminum foil and close the lid and let it cook in medium flame for 15 mins. Finally our chicken tikka dum Briyani is ready to eat.

Tadaaaaaa !!!, Our chicken tikka dum Briyani is ready .

Notes :
  • Frying onion : After cutting the onion to thin slices leave them for 10 mins and squeeze the onions to remove the excess water in it. For best golden fry.
  • You can use saffron on the top layer by adding the saffron to 4 tbsp of hot milk and pouring them randomly
