Vendakka Kara kuzhambu

 I love tamarind based gravies so much. Kara Kuzhambu is one of our favorite lunch time dishes. Every Saturday i make this ladies finger Kara kuzhambu with keera kootu. ( spinach with dhal ) this is the best combination to eat on the rest day and I love making this for the family . My son will eat if his plate is filled with his favorite papadum.

Kara kuzhambu can be made with more veggies like drum sticks, brinjal, potato, small yam and lot more veggies. I love it with ladies finger which so called as okra / bhindi.

Kara kuzhambu and puli kuzhambu many people get confused with the two dishes. The min difference is you add more tamarind to the puli kuzhambu and less chili or pepper powder. While for Kara kuzhambu less amount of puli ( tamarind) and more of pepper or chili powder.

The taste of the karakozhambu you get better with the usage of oil. Sesame oil is the best to use for any kind of tamarind based dishes . I grind my special paste to add up to the gravy to make it extra special and aromatic which i have shared it with you. Do try and share your comments.

Preparation time : 10 mins Cooking time: 25mins Total time: 35mins
Ingredients :
  • Onion 🧅 – 2 medium size
  • Tomato 🍅 – 2
  • Garlic 🧄 – 8 to 9 clove
  • Ladies finger – 6 to 7
  • Salt. – 1 tbsp
  • Chili powder – 1 tbsp
  • Coriander powder. – 1 1/2 tbsp
  • Turmeric powder – 1 tsp
  • Tamarind water – 1 cup
Temper:
  • Curry leaves. – 10
  • Mustard. – 1 tsp
  • Cumin seeds. – 1 tsp
  • Fenugreek. – 1/2 tsp
  • Dry red chili. – 5 to 6
  • Asafoetida. – 1 tsp
  • Sesame oil – 4 tbsp
To grind :
  • Fennel seeds. – 1/2 tsp
  • Garlic. – 4
  • Coconut – few pieces
  • Small onion. – 4
  • Dry red chili. . – 3
  • Fenugreek – 1tsp
  • Coriander seeds – 1 tbsp

Preparation

Step 1 :

Chop onions ,tomato and garlic finely. Cut diagonally the ladies finger in 1 inch size

Step 2 :

In a pan add sesame oil, and add in the ladies finger , sprinkle some salt and sauté them til it gets cooked. It changes it color to dark green.once done ✅.keep it aside in a bowl.

Step 3:

Now in the same pan add some sesame oil and add the things that is mentioned under tempering. Once it splutters it gives a nice aroma then add in the garlic and onions and sauté them

Step 4 :

Now add tomatoes 🍅 and keep stirring until it’s cooked . Then add in the chili powder,coriander powder ,turmeric powder and salt and give them a mix then add the roasted ladies finger and stir them for few minutes.

Step 5 :

Now dry roast the things that is mentioned under “ to grind “ and grind them in a small jar. Then soak tamarind lemon sized in a water and squeeze the juice and keep aside

Step 6 :

Pour in the coconut and onion paste and tamarind and give them a stir and cover cook them for 5 mins. And finally add the asafoetida and serve them with rice ,papad.

Notes :

  • Kara kuzhambu will give a nice flavor when done with sesame oil than any other oils
  • You can either skip or add in the coconut paste
  • Authentic flavor the coconut and small onions have been used
  • You can replace ladies finger with brinjal or small yam of your choice
