Veg kurma(Vegetable Korma)

Learn to make delicious South Indian style mix vegetable kurma that’s flavor-packed, amazingly delicious and easy to make. Serve with flavored rice, roti, poori, paratha or naan for a special meal. Korma, also known as kurma is an aromatic Indian gravy dish made with yogurt, nuts, seeds, spices, onions, coconut & a main ingredient like meat or vegetables.

When my mother In law made this i just loved it and asked her for the recipe. She grinds the tomato along with mint, coriander leaves and green chili together, and grind coconut along with cashew and almond along with some biryani spices which gives the extra flavor to the kurma.

It is easy veg side dish and it can served with chapathi/roti/pulao or jeera rice.

Ingredients:
  • Onion 🧅. – 2 medium
  • Carrot 🥕. – 1/ 2 🥕
  • Beans – 5
  • Potato 🥔 – 1 medium
  • Peas – 1 hand ful
  • Ginger garlic paste – 1 tbsp
  • Chili powder – 1 tbsp
  • Turmeric powder – 1 tsp
  • Coriander powder. – 1 tbsp
  • Salt. – 2 tbsp
  • Cloves. – 4
  • Cardamom – 1
  • Fennel seeds – 1/2 tsp
  • Cumin seeds – 1/2 tsp
  • Curry leaves. – to temper
For grinding :
  • Coconut 🥥 – 1 tbsp
  • Cashew nut. – 3
  • Sesame seeds. – 1/2 tsp
  • Fennel seeds. – 1tsp
For tomato paste:
  • Green chili. – 2
  • Mint leaves. – 1/2 handful
  • Coriander leaves. – 1/2 handful
  • Tomato 🍅 – 2 medium
  • Curry leaves – 5 to 6
Method :

Step 1 :

Firstly, prepare all the items to be done before starting so let’s first grind. Grind everything that is under grinding .Now for the tomato paste add in all the ingredients that is mentioned for tomato paste . Put them in a jar and grind them

Step 2 :

In a small cooker . Pour oil and temper it with some curry leaves, fennel and cumin seeds,cloves and cardamom. Once splutters add in the. Chopped onions and sauté them. Until the onions are cooked now add the ginger garlic paste and stir them until it’s raw smell goes off.

Step 3 :

Now add the chopped vegetables to it and stir them . You can now add the salt and turmeric powder for them to get cooked. In a jar add in the ingredients for tomato paste and grind them to purée then add chilli powder,coriander powder and mix them.

Step 4:

Now , add 1 glass of water then add the coconut and cashew paste with some water and make as coconut milk and add in the kurma as coconut milk and cover them put the weight and leave for 2 whistle. Finally temper the kurma with some sesame oil, dry red chilli and curry leaves.Our vegetable kurma is ready

Notes:

  1. You can any number of vegetables of your choice
  2. Can use only coconut or cashew or instead you can use coconut milk .
  3. It thickens after sometimes since we added coconut and cashew so add in some water and put 1/2 tbsp of salt to make it taste better
