Palak paneer

Palak paneer is a vegetarian dish originating from India , consisting of Paneer (a type of cottage cheese) in a thick paste made from puréed spinach, called palak in Hindi and other Indian languages.

Palak paneer is prepared by first boiling and pureeing spinach.The puree is then mixed with sauted tomatoes and onions. Grilled cubes of paneer are then added to the puree. Palak paneer is typically spiced with ginger, garlic, tomatoes, garam masala, turmeric, chili powder and cumin.

I love spinach, always love the green foods much . Green colored food is meant to be healthy. My parents gave me spinach twice week. I started loving it when I saw The Spinach guy ,Mr POPEYE because of him I started to have crush on spinach. And the love for paneer in any forms I love it. When both combines together that will be best ever favorite dish. Acc, to me palak paneer is the best vegetarian side dish

Preparation time: 20 mins Cooking time: 30 mins Total time: 1 hour
Ingredients: To grind
  • Cashew nuts – 4
  • Onion 🧅 – 2 big
  • Tomato 🍅 – 2 medium
  • Green chili. – 4
  • Coriander leaves – few
  • Mint leaves – 8 to 10 leaves

To temper :

  • Fennel seeds – 1 tsp
  • Butter. – 2 tbsp
  • Cumin seeds – 1/2 tsp
  • Cinnamon stick – 1
  • Cardamom – 1
  • Ginger garlic paste – 1 tbsp
  • Methi leaves. – 1 tbsp
  • Cream or curd. – 1 tbsp
Main ingredient :
  • Spinach palak. – 1 bunch
  • Paneer cubes. – 20
  • Ice cubes. – 1 tray
  • Salt. – 1 tbsp
  • Chili powder – 1 tsp
  • Coriander powder -1/2 tsp
  • Turmeric powder – 1/2 tsp

Method :

Step 1 : (blanching )

Cut off the stem part in the palak and rinse them in water. Now dunk them in the boiling water for 40 to 50 seconds and then refresh in chilled water ( this helps to retain the color of the spinach ) and squeeze them from the chilled water and blend it in a jar.

Step 2 : (Grinding)

In a pan put some butter and add the cinnamon stick, cardamom, cumin and fennel seeds when splutters add in the chopped onions,green chili and cashew nut. Once it is cooked add in the chopped tomatoes ,mint and coriander leaves and fry them until it turns mushy. Cool them completely and grind them

Step 3 :

In the same pan , add some butter and roast the paneer cubes to golden brown then keep aside. Now add the butter and add a bay leaf and ginger garlic paste sauté them till the raw smell goes off then pour in the the paste.

Step 4 :

Palak which is blanched is added to the jar for a green paste. Then it is poured into the pan and given a stir. Finally add in the some chili powder,turmeric powder,coriander powder and stir them for few sec then add the fried paneer cubes.

Step 5 :

Now add in some curd or cream to the top of it and sprinkle the dry methi leaves. For a extraordinary flavor

Notes and tips :
  • To maintain the color you can add a spoon sugar while branching or grinding.
  • Do not cover and cook the spinach which will give some bitterness to the spinach.
  • You can fry the paneer and use it or else you can add it directly.
  • Add paneer to the warm water to make the paneer softer.
