Schezwan Egg Fried Rice

As in the name. Fried rice should be kept on high flame and get it little fried to get in the taste of it. After preparing the food cook it in high flame and toast it with big spoon.

Preparation time: 30 mins Cooking time: 30 mins Total time: 1hour

Ingredients:

  • Carrot 🥕 – 1
  • Beans. – 5 to 6
  • Capsicum 🫑 – 1/2 both red and green
  • Spring onions – 1 bunch
  • Oil. – 1/2 cup
  • Salt 🧂 – 3tsp
  • Pepper – 1 tbsp
  • Schezwan Sauce – 1/2 cup
  • Garlic 🧄 – 5 to 6 cloves
  • Ginger – 1 inch
  • Onion 🧅 – few small or 1 big onion

Ingredients: for frying eggs :

  • Eggs 🥚 – 4 to 5
  • Salt 🧂 – 1tsp
  • Pepper. – 1 tsp
  • Oil – 2 tbsp

For basmati rice

  • Basmati rice 🍚 – 1 cup
  • Water – 2 cups
  • Salt. – 2 tbsp
  • Oil. – 2 tsp

Method : To cook rice

Step 1:

In a bowl add in a cup of basmati rice and rinse them thoroughly with some water until the water looks really clear. Now soak them with some water in for half an hour minimum.

Step 2 :

Now after soaking them. In a pan or cooker add in 2 cups of water and add in the salt. Now turn on the flame when the water boils add the rice. Cook them to 75 % And once cooked drain them and spread them in a paper or cotton cloth.

For egg frying:

Step 1 :

In a bowl break the eggs and add them to it. Now in a pan or small kadai add some oil and once it is hot pour in the eggs. Add some salt and pepper to it.

In a large wok, add oil and add all the veggies . ( you can add any veggies of your choice like corn or peas ) fried rice must have carrot,beans,cabbage , capsicum and spring onions and add some salt and pepper to it and give a stir . Now , cook them 75% then add in the Schezwan sauce. I made my own Schezwan sauce and it is easy and can store them up to 6 months.

Step 2:

Now mix the sauce well and add in the cooked rice and egg to it and give a stir. Finally add some soy sauce and also some vinegar to the mix and fry them for few mins in the wok. Finally garnish them with some spring onions.

Step 3:

Garnish it with some spring onions and Serve them with Raita and gobi Manchurian .
