A simple and healthy curry or sabzi recipe prepared mainly with choice of vegetables. it can be ideal north indian cuisine curry recipe for roti or chapati with flavours from all the veggies. The recipe can be prepared with either gravy base or as a dry curry.
Ingredients:
- Carrot. – 1/2
- Beans. – 5 to 6
- Peas. – 1 handful
- Cauliflower. – half cup
- Capsicum. – 1/2
- Potato. – 1 medium

Ingredients: To temper and grind
- Butter π§ – 1 tbsp
- Fennel seeds – 1 tsp
- Cloves. – 4
- Cinnamon stick. . – 1 inch
- Onion. – 2
- Tomato. – 2 medium
- Green chili. – 1
- Cashew nuts . – 4
- Ginger garlic paste. – 1 tbsp
- Turmeric powder – 1/ 2 tsp
- Chili powder – 1 tbsp
- Coriander powder – 1 tbsp
- kasuri methi. – 1 tbsp
Preparation:
Step 1:
Cut all the vegetables of desired size (you can use any vegetables of your choice ). Keep them aside. Now, in a large pan add some butter and when it is hot add the fennel seeds, cinnamon stick , cloves and green chili.when it splutters add in the onion and sautΓ© them till it is cooked. Then add in the ginger garlic paste cook them till itβs raw smell goes off. Then add in the cashew nuts and tomato. Add in the masala powder and cook them until it becomes mushy.
Step 2:
Keep the mixture aside let it get cool. Now in the same pan add in the butter π§ and some kasuri methi and then mix all the vegetables that are cut ready . SautΓ© them for few minutes adding up some salt and keep them aside too.
Step 3 :
Now, grind the mixture that is fried and cooled and again with the same pan you can add the butter and pour this. Mixture to it and give a stir.Add in some chili powder salt and garam masala. According to your taste. Finally add in the vegetables and sprinkle some kasuri methi
