- Mushroom 🍄 – 1 pack
- Onion 🧅 – 1 medium
- Garlic 🧄 – 8 to 9 cloves
- Ginger. – 1 inch
- Spring Onion. – 1 bunch
- Carrot – 1 medium
- Beans. – 6 to 7
- Rice Vinegar. – 1 tbsp
- Salt 🧂 – 1 tbsp
- Pepper – 1 tbsp
- Basmati Rice 🍚 – 1.5 cups
- Oil. – 3 tbsp
- Schezwan Sauce. – 5 to 6 tbsp
Wash rinse and soak basmati rice for 1 hour. Cut all the vegetables to desired shapes and sizes and keep them aside. Its mushroom time.Rinse and clean the mushroom twice so that there is no trace of mud on the mushroom. Now, thinly cut the mushroom and soak them in salt and turmeric water.
In a large wok pour some oil once its hot add in the chopped garlic , onion and ginger and sauté until its raw smell goes off and cooked. Now, add the other chopped vegetables and sprinkle some salt and pepper ad give a mix. Cook them until veggies are 75% cooked.
In a pan add water and turn on the flame. Once the water starts to boil and the salt and pinch of sugar that is necessary for a fried rice and also add in some drops of oil and now add in the rice to it. After 7 to 8 minutes the rice is now semi cooked . turn off the flame and drain the excess water and spread and place the rice on cotton cloth or in a plate.
Add the schezwan sauce to the vegetable mix that is done hot in the wok give a mix and add some vinegar to it and mix them well with the vegetables. Also add the mushrooms to it so that the masala n sauces get mixed up .Now add in the rice that is cooked to this mix and give them a stir so that the sauce is well coated with the rice and in medium flame leave it for few minutes until the moist in it goes off.
